♥ ¾ cup (75 g) high-quality unsweetened cocoa powder (Dutch-process or natural)
♥ ½ cup (65 g) all-purpose flour
♥ ½ teaspoon fine sea salt
♥ 1 tablespoon milk or water (maintains moisture with reduced sugar)
♥ ½ cup dark chocolate chips or chopped 70–75% chocolate (optional)
♥ Optional for Traditional Sweetness:
Add an additional ¼ cup sugar if you prefer a sweeter brownie.
Instructions
1. Preheat oven to 300°F (149°C).
2. Lightly butter an 8×8 clear glass dish or line with parchment paper.
3. Melt butter gently. Let cool 2–3 minutes.
4. Whisk melted butter and sugar for 1–2 minutes until glossy. Even with reduced sugar, this helps create a delicate crackle top.
5. Add eggs and vanilla. Whisk vigorously for about 30 seconds.
6. Stir in cocoa powder and salt until thick and smooth.
7. Stir in 1 tablespoon milk or water to maintain fudginess.
8. Gently fold in flour just until combined. Do not overmix.
9. Fold in chocolate pieces if using.
10. Spread evenly into prepared dish.
11. Bake on the middle rack for 25–32 minutes. Begin checking at 24–25 minutes. Brownies are ready when the center is set but slightly soft, a toothpick shows moist crumbs, and edges just begin pulling from the sides.
12. Remove when they look almost done. Glass continues cooking after removal.
13. Cool at least 90 minutes before slicing.
