Ingredients (Make 4 Servings 1 ½-2 cups per Serving)

 2 cans chickpeas, drained + rinsed

 1 large cucumber, diced

 1 pint cherry tomatoes, halved

 1/2 red onion, finely chopped

 1 bell pepper, diced

 1/2 cup fresh parsley, chopped

 1/4 cup fresh mint, chopped (optional)

 3 tbsp olive oil

 2–3 tbsp lemon juice

 1/2 tsp sea salt

 Black pepper to taste

 Optional: feta or olives

 

Instructions

1. Prep your veggies.

2. Combine chickpeas, cucumber, tomatoes, onion, and pepper.

3. Add herbs.

4. Dress with olive oil, lemon, salt, and pepper.

5. Toss and adjust seasoning.
